🎓 Education :

Dr. Sara Elkheir Mustafa holds a Doctor of Philosophy (Ph.D.) in Food Science and Technology from Sudan University of Science and Technology, earned in 2011. Her Master of Science (M.Sc.) in Food Hygiene and Safety was awarded by the University of Khartoum in 2000. She completed her Bachelor of Science (B.Sc.) in Nutrition and Food Technology with honors at Omdurman Islamic University in 1995.

Dr. Mustafa is currently serving as an Associate Professor at Omdurman Islamic University in the Faculty of Science and Technology, Nutrition and Food Technology Department, a role she assumed in 2024. Previously, she worked as an Assistant Professor at Qassim University in Saudi Arabia from 2018 to 2024. Earlier in her career, she held the position of Lecturer and Department Head at the College of Education for Girls (now King Khalid University) between 2002 and 2004. She began her academic journey as a Teaching Assistant and Lecturer at Omdurman Islamic University from 1995 to 2000.
